INGREDIENTS
• 2 sweet potatoes
(sliced in thin rounds)
• 1/4 teaspoon each salt and freshly
ground pepper
• 2 teaspoon mixed dried herbs
• 1 cup Parmesan cheese
(finely grated)
• 2 cups milk
METHOD
• 1. Preheat the oven
to 400 degrees F (200 C).
• 2. Butter or lightly oil a baking dish.
• 3. Place the sliced potatoes in a bowl
and season with salt and pepper.
Add the mixed herbs and half
of the cheese.
• 4. Mix well.
• 5. Transfer to the greased baking dish
and pour the milk. It should just
cover the potatoes.
• 6. Bake for 45 minutes, until the milk
is absorbed, the potatoes are soft
and the top and edges are golden.
• 7. Sprinkle remaining cheese
and top with cut tomato rounds
and bake till cheese melts
for another 5-7 minutes.
• 8. Serve hot.
